The first mistake that you don’t want to make is using some cold ingredients and some room temperature ones. If a few of your ingredients are room temperature and a few are cold, they will not bake well while in the oven. The way to avoid this mistake is to use all room temperature ingredients if the recipe calls for one of them to be.
Another mistake that you should avoid is opening the oven door while the muffins are baking. If you open the oven door you will let in some of the cold air from the outside. This cold air will stop the muffins from rising as they should. Try to set a timer so that you know when the muffins will be done and you won’t have to open the oven door to check on them.
